In honor of my new book release on april 30 here are the first two recipes from the book.
Peter’s perfect chicken noodle soup
ingredients: 2 cups cooked chicken cubed, poultry seasoning, 5-6 cups of low sodium chicken broth, 2-3 stalks of celery cut into big chunks, 4 carrots cut into big chunks and 1 1/2 cups extra wide egg noodles cooked according to package.
Directions: put broth and vegetables into pot bring it to a boil and then turn it down to simmer. (no lid!) Until the vegetables have softened so that they give when you test them with a fork. Add a few shakes of poultry seasoning and the chicken. Simmer for another hour. Veggies should be soft but not mushy. Add the cooked noodles to the individual soup bowls. This keeps the noodles firm and they don’t get slimy and absorb all of the broth. Store the noodles and the rest of the soup separately.
Hella good herbed jack cheese twists
ingredients: 1 cup flour sifted, 1 ½ tsp baking powder, ½ tsp salt, 2 t cold butter or margarine, ¼ cup cheddar cheese shredded, ¼ monterey jack cheese shredded, 1/3 cup cold water, ½ tsp poultry seasoning and a dash of pepper.
Directions: preheat oven to 425 degrees. Sift flour, baking powder and seasoning in medium sized bowl. Cut in butter or margarine and the cheese. They must be cold. Mixture should be crumbly.sprinkle in the water gradually until the mixture begins to pull away from the sides of the bowl. Roll it out into a rectangle on a lightly floured board. Cut into strips and twist gently. Place one inch apart on an ungreased baking sheet. Bake for 10 minutes transfer to a rack to cool.
